FISH FILLETS IN CHEESE SAUCE
750g fish fillets
1½ cups goat’s milk
1½ tablespoons butter
1½ tablespoons flour
¼ cup white wine
1 cup grated cheese
1 tablespoon parsley - chopped
Roll fillets and secure with tooth picks.
Cook in milk for 15 minutes in a moderate oven.
Remove to serving dish and keep warm.
Melt butter, add flour and stir in milk remaining from fish.
Cook, stirring until thickened.
Add white wine and cheese, stir until dissolved.
Season to taste.
Pour sauce over fish and sprinkle with parsley.
